Chowders
Chowders are thick soups made from fish, meat and vegetables.
Soup garnishing for chowders and meat soups:
Chopped parsley
Thin slices of lemon for fish chowder.
For chicken corn chowder:
Add 1 ounce of pimiento strips
And rashers of diced, cooked bacon.
For Salmon chowder, just before serving add cream; heat but do not boil.
For ham and corn chowder : Serve with celery croutons.
