Quick Prawn Bisque

675 g firm ripe tomatoes
25 g butter
1 small onion, finely chopped
1 carrot, finely chopped
1 streaky bacon rasher, derinded and chopped
2 cloves garlic, finely chopped
25 g flour
1 litre hot chicken stock
salt and pepper
Make tomato soup by putting all ingredients in a pot boil.
When ready put in liquidizer until smooth.
Sieve.
Then Saute' i n green pepper cut into rings in 25 g butter.
Add i pkt frozen prawns and cook lightly until browned.
Add the soup and 4 fluid ounces single cream.
Serve warm
Serves 4.
