Roast Beef Salad

150g sliced rare roast beef 1 small raw beetroot, cut into matchsticks 75g curly endive 100g snow peas, cut into 3cm pieces 2 tablespoons sour cream 2 tablespoons olive oil 2 teaspoons whole grain mustard Wash and dry endive. Place snow peas into a large pan, and blanch for 1 minute. Cut roast beef slices into strips. Arrange the endive on individual plates, top with snow peas beetroot and roast beef strips Whisk sour cream, oil and mustard until combined. Place a spoonful on each salad. Serves 4 .

Lamb Salad Minted

Serves 4 500g lamb fillets 1 tablespoon olive oil 1 red lettuce 60g cherry tomatoes 1/4 cup olive oil extra 1 tablespoon white wine vinegar 1/2 teaspoon French mustard 1 tablespoon chopped mint 1/2 teaspoon sugar 100g cheese (not feta) 1 tablespoon olive oil, extra Trim fat off lamb and stir fry lamb. Let cool. Wash and dry lettuce and tear into bite size pieces. Arrange lettuce on individual plates, add cherry tomatoes and lamb slices on top. Place the oil, vinegar, mustard, mint and sugar in a screw-top jar and shake well. Drain the cheese and cut into fingers about 1cm thick and 4 cm long. Pat dry with paper towels. add the cheese and cook for 2 minutes or until golden. Arrange the warm cheese on top of salad, shake dressing again briefly, drizzle over salad and serve immediately.

Peace, discovery and nature in the Belgian Ardennes

As soon as i arrive, I take a deep breath of fresh country air, scented with pine and nature, back at the hotel i Immerse myself in the peace, the warm family welcome and the impressive tropical garden. With my map of walks, I get to know the local woodland. After a delicious gastronomic dinner(not included in the package, but half-board rates available) and a well-deserved rest, I start my day with an excellent breakfast on the banks of the pond. After an enjoyable 6 km walk (or drive) crossing two villages and a wood, I am welcomed to the Morepire Slate Centre, and go 20m underground to experience the hand life of my grand-parents' generation who mined slate here. I come back to9 the surface quite moved, and the video presentation helps me understand more. Beer was first produced around 7,000 years ago As having been boiled, as part of the brewing process, beer was more popular to drink than water. St. Arnold of Metz is one of the patron saints of beer and brewers. 95% of the ingredients of beer is water. Hops are small, green cone-shaped flowers that grow on the hop plant. There are over 50 varieties throughout the world. Ales are fermented at around 18C and should be served at room temperature. Lagers are fermented at around 10C and should be served chilled.
