Chicken Livers with Mixed Herbs - Starter

1 pound chicken livers 1 tablespoon minced onion 1tablespoon chopped parsley salt & pepper 1/2 teaspoon crushed oregano 2 tablespoons olive oil Some flour Combine all ingredients; pour over livers. Let stand 1/2 hour to marinate. Drain livers and roll in flour. Saute' lightly in butter or margarine for 5 minutes. Place each liver on cocktail stick on plate. Sprinkle with parsley, just before serving.

Healthy Coffee Whip - Dessert

1/2 ounce powdered gelatine 1/4 pint strong black coffee 1/2 pint milk 2-3 saccharine tablets 2 egg whites 1 tablespoon single cream few almonds Dissolve gelatine in the coffee. Warm the milk and add crushed saccharine. Add the dissolved gelatine. Leave to get cold and when beginning to set whisk in the stiffly beaten egg whites and cream. Chill and serve sprinkled with chopped or silvered almonds.

Pork Omelette

1 tablespoon oil 6 eggs salt and pepper 1 small onion, chopped 6oz lean pork , minced Heat greased pan and cook the onions for 1/2 a minute. Add pork and cook for 5 minutes. Beat eggs, season with salt and pepper. Add to the pan and cook for 1 1/2 minutes shaking the pan from time to time. Serve at once.

1 lb broccoli 1 teaspoon gin 3 tablespoons oil 1 teaspoon sugar 1 teaspoon salt 2 tablespoons stock (or water) 2 tablespoons soya sauce Start by washing the broccoli and cut into pieces 1 1/2 inches long. Heat oil, sprinkle in salt, and cook the broccoli uncovered for 8 minutes, shaking the pan from time to time. Mix soya sauce, gin and sugar and pour over the broccoli. Add hot stock, cover, bring to the boil, cook for 2 minutes and serve.

Some tips on driving in the Netherlands

Fines have increased dramatically - for example, the penalty for exceeding the speed limit by 40km/hr can be up to ,750 Euros. If you are unable to pay an on-the-spot fine your vehicle may be impounded.

Travel Tips

Attaching a tag with your name an address to the outside of your luggage is always a good idea, as you never know when your suitcase might go astray. But I also attach my name and address to the inside of my case - that way there's a much better chance of it being returned quickly if the other comes off.

Lamb Shank End Casserole

6 half-legs of lamb, shank end ( about 1 pound each) Seasoned flour 3 tablespoons cooking oil 2 fluid ounces lemon juice 2 fluid ounces water 1 tablespoon sugar 6 bay leaves 6 medium-sized potatoes, cooked, peeled and quartered. 1 pound cooked cut runner beans Dredge shank ends with flour. Heat cooking oil; add shank ends and brown well on all sides. Place shank ends in 6 individual casseroles; reserve dripping. Combine lamb dripping, lemon juice, water and bay leaves; pour over shank ends. Cover and cook in slow oven (325 F, Mark 3 ) for about 1 1/2 hours or until lamb is tender. Add potatoes and beans. Cover and cook 10 minutes, or until vegetables are throughly heated. Serves 6

Shoo-Fly Pie - Dessert

A Pennyslyvania Dutch single-crust pie with a cake-like filling, topped with crumble made of flour, sugar and margarine. 1 ounce sifted flour 4 ounces sugar 1/8 teaspoon salt 3 tablespoons margarine 1 egg 4 ounces black treacle 2 tablespoons boiling water 1/2 teaspoon bicarbonate of soda 1 unbaked 9-inch pie case Mix flour, sugar, salt and margarine together until crumbs are formed. Beat egg until light and fluffy. Add egg to black treacle, boiling water, and bicarbonate of soda is dissolved. Add all but 1 ounce crumb mixture to black treacle mixture and stir until well blended. Pour into the pastry lined dish. Sprinkle top with reserved crumbs. Bake in moderate oven (375 F) Mark 5 for 35 minutes.

Rib Roast or Steak

1 3-rib roast, seperated into steaks Or 1 4- pound steak 4 cloves garlic, crushed in salt 6 fluid ounces olive oil Rub both sides of meat well with garlic salt. Brush generously with olive oil. Grill 10 to 15 minutes on each side.

Prawns in Mustard Sauce - Starter

1 1/2 pounds fresh prawns, cooked or two 6 1/2-ounce cans prawns 2 tablespoons vinegar 2 1/2 fluid ounces salad oil salt and pepper 2 tablespoons prepared mustard 1 teaspoon paprika 2 spring onions with tops finely chopped 1 celery heart, finely chopped Clean prawns, or drain canned ones. Combine ingredients and pour over prawns. Toss lightly. Chill 2 hours. Serve on shredded lettuce or in scallop shells. Serves 6.

Although many people think of Vichyssoise as a classic French dish, the original rich cream soup of potatoes and leeks, served chilled and sprinkled with finely chopped chives, was created in 1941 by Louis Diat, then chef of the Ritz-Carlton Hotel, in New York. 4 potatoes 3 leeks 16 fluid ounces chicken stock a knob of butter or margarine 16 fluid ounces milk 8 fluid ounces cream salt and pepper 4 tablespoons chopped chives 1/2 teaspoon paprika Peel and dice potatoes. Cook with diced leeks (using green tops also) in stock until very soft. Put into a blender. To this puree' add butter, seasonings, milk and cream and reheat.
