Grape Pie - Dessert

"Grape Pie - Dessert 2 pounds grapes 5 to 6 ounces sugar 1 ounce flour grated rind and juice of 1/2 lemon pastry for a 9 inch pie dish Slip pulp out of grape skins. Reserve skins. Cook pulps until seeds loosen and press through a colander. Mix sugar, flour, lemon rind and juice. Add grape juice and skins. Turn into pastry case. Cover top with the remaining pastry. Bake on lower rack of very hot oven (450F or Gas Mark 8) for the first 15 minutes. St. Patrick's Day Pudding

"St. Patrick's Day Pudding 2 packets fig biscuits 4 fluid ounces milk 2 ounces butter or margarine 1 egg well beaten 1 teaspoon cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon nutmeg 1 teaspoon lemon juice 1/4 teaspoon grated lemon rind 1 tablespoon baking powder Break fig biscuits into milk. Let stand 15 minutes, stir to blend. Cream butter, egg cinnamon, cloves nutmeg, lemon juice, lemon rind and baking powder. Stir into fig mixture. Divide into 12 small greased moulds; cover tightly with aluminium foil. Steam 30 minutes. Cool a few minutes before unmoulding. Homemade Meatless Lentil Soup

"Homemade Meatless Lentil Soup 12 ounces lentils (soaked overnight in cold water) 1 onion chopped 1 carrot diced 3 sticks celery, diced 3 1/4 pints hot water some chopped parsley Drain the lentils and add onion and brown for 5 minutes. Add carrot, celery salt and pepper and hot water. Cook on low heat till lentils are tender, about 50 minutes. Rub through a sieve. Bring to the boil again and serve garnished with parsley. Eggs Benedict - Breakfast

"Eggs Benedict - Breakfast 4 slices of cooked ham 4 thick slices of buttered white toast, cut the size of the ham Poached Eggs: 250 ml water 4 tablespoons white vinegar 4 eggs Hollandaise Sauce: 2 egg yolks 1 tablespoon lemon juice 100g butter, cut into 8 pieces pinch of cayenne pepper 1/2 teaspoon dry mustard Place a piece of ham on each slice of toast. Keep warm. Divide the water and vinegar equally between 4 ramekin dishes. Cook for 2 minutes in microwave until boiling. Break an egg into each. To make the sauce, prick the egg yolks and place with the lemon juice in a small bowl. Cook for 1/2 minute then beat hard until smooth. Prick the eggs for poaching, place in the oven and cook for 2 minutes. Meanwhile beat a piece of butter at a time in to the sauce, until all pieces are incorporated Beat in the cayenne pepper and mustard. Place the poached eggs on the ham and toast and top with a large spoonful of sauce. Serve at once Serves 4. ----- CentreT
